Eggs on a bed of creamy Greek yoghurt and rose harissa. Mint and fennel capture the flavours of Cyprus. Decorated with nuts, cherry tomatoes and a few pickles.

Chana flatbread is a little like a pizza base. It is quite stiff and crispy. This allows you to cut it into pizza shaped slices to eat.
If you want to serve it this way you will need to make up the chana flatbread batter about 1 hour advance. The chana bread is cooked for around 10-12 minutes in a hot 12 inch frying pan. It shouold be

Find a small plate.
Smear the rose harissa on the plate into a large circle. Top with yoghurt and smear over the harissa to cover the circle. Then smear tahini on top of that. Add salt and torn herbs along with the 3 chopped cherry tomatoes, capers and chopped pickled cucumber.
It should be pretty as a picture.
Boil eggs so they are half way between hard boiled and soft boiled. It usually takes about 4 minutes if you are using medium sized eggs.
Once boiled cool a little under cold water so that they are able to be handled.
Take a very sharp knife and chop them in half. I usually say "Haya!" to add to the drama.
Then scoop the eggs out of their shell using a spoon and arrange on the plate. Decorate with pecans or top with a few crushed and toasted nuts.
Add a little salt and serve with posh napkins and fresh coffee! Indulgent!
